It all begins with an idea…
Each year starting around September and October ideas for themes or concepts get discussed and brainstormed until one idea is selected. At this point thoughts for the various elements and flavors can begin to be developed and either decided upon or maybe voted for.
Refinement
Once a a theme is decided and the years selection of chocolates being made are decided, the head chocolatier Hans designs the concepts for the individual pieces. Along with the shape and exterior, how the various pieces are going to actually be made is often a part of what is required to figure out at this stage.
Recipes
Head chocolatier Hans then has to sit down and formulate and scale recipes in order to come up with exactly what is going to be required to make each chocolate. Many things are often unknown and have to be adjusted on the go during the making of the chocolate. Typically basic recipes are selected and them modified or adjusted to suit the needs for a particular idea.
Manufacturing
Finally with all the preparation done in advance the week of winter chocolate making arrives. Recipes are mixed, chocolate centers are piped, cut, molded or formed into shape over the course of several days. Centers are dipped in chocolate decorated using many techniques either learned over the years or invented just to try and achieve a particular look.
Packaged and Enjoyed
Finally the finished chocolates are packaged up so that we can give a gift of enjoyment to friends, family and acquaintances.
